Celebrating the start of spring, this is when we see the flowers starting to bloom; not just from ground but also in our lives. The Goddess is still the Maiden who is just growing into her woman-hood. This is the time, the God begins flirting and courting the Goddess. This is a time truly of what resurrection is. We resurrect life.

At this time night and day stand in perfect balance, with light on the increase. This is the time when the young Sun God now celebrates a sacred union with the young Maiden Goddess, who conceives; and in nine months, she will again become the Great Mother, This is a time of great fertility, new growth, and newborn animals.
Eostre is the name of the Saxon Lunar Goddess of fertility (from where we get the word estrogen), Her two symbols were the egg and the rabbit. She was the maiden whose aspects of renewal and rebirth brought about the reappearance of bright spring flowers, baby chickens fresh from the shell, baby bunnies from their winter dens. The most common symbol is the egg. Which seems to have been used as a fertility symbol since the dawn of man. Eggs were marked with brilliant colors along with various types of bands drawn upon them which represented the cycles of life, death, and rebirth... The golden orb of its yolk represents the Sun God, its white shell is seen as the White Goddess, and the whole is a symbol of rebirth.

Foods of Eostar These are some traditional Polish recipes that our family had for Easter. But they are so good I just had to share them with you. They make the perfect Eostar breads and cakes. Foods used with seeds are amongst the most common.

Mohn Cake (Poppy Seed Cake) Polish
8 cups flour 1 pkg. dry yeast 1 stick of butter or margarine melted 5 eggs 3/4 cup sugar 1 tsp. salt 2 cups of warm milk
Filling: 1 lb. poppy seed or ground nuts 1 cup sugar 1 1/2 sticks margarine or butter 1 cup milk, hot 1 lemon rind
Combine all filling ingredients and beat well.
Dissolve yeast in 1/2 cup of the warm milk. Combine the flour, sugar, salt and eggs. Add remainder of the milk, butter and yast mixture. Beat until elastic. Sprinkle top with a little flour and cover with a cloth. Let stand in a warm place until double in size. Punch down. Divide the dough into 2 pieces. Put on floured board and roll out into a rectangle. Spread cool filling and sprinkle with raisins. Roll like a jelly roll. Place in greased pan and let stand to rise again. Brush top with margarine or butter bake for 45-60 min in 350 degree oven.

Nana Lena's Egg Sauce This was a traditional Easter sauce for us but also makes a great Eostar recipe.
12 mashed egg yolks 2 TSP. Mayonnaise 1 whole jar of white horse radish Pint of sour cream Pinch of salt & pepper (to taste) Pinch of sugar Fresh chopped chives
Beat ingredients together till it forms a sauce. Pour or dip cold ham or Kielbasa in this.
